Cheese Pennies

Cheese Pennies
 
1 jar (5 ounces) pasteurized process sharp American cheese spread
1/4 cup solid shortening (Crisco or something similar)
2/3 cup flour (not self-rising)

In a small mixer bowl, mix all ingredients on medium speed 20 - 30 
seconds.  On a lightly floured surface, mold dough into 2 rolls, 1
inch 
in diameter and 8 inches long.  Dough will be soft but not sticky.
Wrap 
well and chill for at least 2 hours.

Heat oven to 375.  Cut rolls into 1/4 inch wide pennies.  Place on 
ungreased baking sheet, not too closely as they expand a little.  Bake
10 - 12 minutes or until light brown.

Notes:
1.      Cheese with bacon, garlic, or hickory smoke favor can be 
substituted.
2.      I always use Old English cheese.
3.      I like to cool the pennies on a paper towel.
4.   The dough can be chilled for several days.
