Dried Apricot Cheesecake

Dried Apricot Cheesecake


Ingredients 
2 lbs. Riccotta Cheese 
1/3 cup Heavy Cream 
5 oz. Sugar or 1/3 cup 
Pinch of Salt 
1 tbsp. All Purpose Flour 
2 tsp. Finely chopped Orange Zest 
5 Egg Yolks 
5 tbsp. Sun dried Apricots, thinly 
sliced, 1/3 cup 
2 tbsp. Pinenuts 
Butter, for greasing the pan 
Preparation

If your apricots are hard you can steam them in a bamboo steamer and
soak in hot tea. Drain. 

Butter an 8" foiled spring pan.

Combine all ingredients into a mixing bowl and mix well.

Pour into the greased pan

Bake 40-45 minutes in a preheated 350° oven. Test with toothpick until
clean.

Cool 30 minutes prior to un-molding.

For Crust:

Combine 1/2 cup graham crackers, crushed; 1/8 cup melted butter/ and
1/2 tsp Cinnamon in a bowl with your fingers and form a thick paste.
Line the bottom of the pie pan before adding cheesecake mix
